Gouda Wheel
/GOO-dah weel/ n.- 1. A pressed, wax-coated Dutch cheese formed into a disc of notable lateral breadth, aged to a density that registers less as food and more as load-bearing infrastructure; esp. one displayed among peers on a shop shelf, where the visual effect is less charcuterie and more geological survey.
- 2. colloq. Dairy architecture. Sits on a cutting board the way a millstone sits on a riverbank: with zero interest in being moved, and a circumference that requires a dedicated surface, a committed knife, and a conversation about how much you actually want.
"The cheesemonger rolled a thiccc aged Gouda wheel onto the counter at the Borough Market stall and the cutting board immediately became a formality. The wax rind alone had structural ambitions."
From Gouda, a city in the Dutch province of South Holland, near which the cheese has been traded since at least the 13th century, making it one of the oldest recorded cheeses in Europe. The wheel format derives from traditional wooden mold pressing, which maximized even aging across the body. Centuries of Dutch dairy engineering produced, essentially, a very serious disc. The wheel did not ask for your opinion.
Filed by

Filing from Borough Market where a Gouda wheel just made the cutting board look decorative.
Ruling ADMITTED, WITH A FOOTNOTE

Admitted. The footnote will note that 'geological survey' is atmospheric language and the wax rind's structural ambitions require a documented hardness before the next entry.
In the margin

The cheese has been doing this since the 13th century and the cutting board is only just now realising it was never in charge.
